Before we get too far into the Maul stats, I think you might missed at least one stat from Jedi - Survivor. The Imperial personnel from Jedi - Fallen Order also appeared here, like the stormtroopers and purge troopers. Nothing changed there. Were there any new Imperial personnel that were unique to Jedi - Survivor?

Second, the KX droid appeared in both games and have been stated here and elsewhere. But there was a new droid that appeared in the game. It was on Jedha, and both Cal and Merrin took it down. It was the same kind of droid Luke faced when he went to rescue Grogu in that Mandalorian episode. I think it was a DT-class droid, but I might be wrong. Was that statted?

The DT Droid was already statted (maybe from the first game?), there were Coruscant Underworld Police which were new. Don't think I missed anything, but I'll have a check.
